Triple-layered Yogurt Parfait

Yogurt parfait makes for a deliciously filling breakfast, but store-bought versions are often full of added sugar or unnatural sweeteners. Instead of spending money and wasting calories on bad ingredients, why not make your own? Double the ingredients and make a few portions for the week ahead. Go on…the money you save can go on that extra box of chocolate protein bars. Convinced?!

Sticky Grilled Peaches

Sticky and sweet, these heavenly peaches are balanced with creamy plain yogurt and a sprinkling of heart-healthy nuts. While low-fat, fruit does contain plenty of natural sugar so be sure to watch your intake for the remainder of the day.

Moroccan Quinoa

Quinoa (pronounced keen-wah) is member of the seed family. I mispronounced this for several years before being corrected and turning to Google for definitive advice. Regardless of what you call it, its wonderfully healthy and versatile. Not only is it a complete protein – making it fantastic for vegetarians – but this superfood is also rich in iron, magnesium and dietary fiber. Tasty and just a little bit sweet, this recipe will leave you with enough for a quick and delicious cold lunch during the working week.

Healthy Portobello Pizzas

I’m not going to lie, I miss pizza. But anyone on a low-carb diet knows those white-flour cheesy slices are a no-go. This dish uses Portobello mushrooms as a base and can be thrown together with whatever remaining veg you have in the fridge. An excellent way of incorporating more veggies into your diet, this dish also satisfies pizza cravings.

Sorry Dominos, you’ll just have to wait…
