Now I wouldn’t suggest you eat this every day. It’s more of a Sunday brunch kind of deal. But in true Fit Foodie style, this has nothing but natural healthy ingredients that will nourish your body – not to mention put a smile on your face.

INGREDIENTS:
STRAWBERRY PANCAKE BATTER
- 1 large egg
- ½ cup rolled oats
- 170g pot of plain Greek yoghurt
- 8 strawberries, hulled
- ½ teaspoon natural vanilla extract
- 1 teaspoon cinnamon
- 1 packet of stevia
CHOCOLATE PANCAKE BATTER
- 1 large egg
- ½ cup rolled oats
- 170g pot of plain Greek yoghurt
- 2 tablespoons raw cacao
- ½ teaspoon natural vanilla extract
- 1 teaspoon cinnamon
- 1 packet of stevia
1 tablespoon organic coconut oil GARNISH
- 1 heaped tablespoon healthy chocolate mousse
- 1 teaspoon bee pollen
- 1 teaspoon cacao nibs
- 6 strawberry halves
- drizzle raw honey
METHOD:
- In a blender, process all strawberry batter ingredients until smooth and set aside.
- Repeat for chocolate batter.
- In a large frying pan, add 1/2 tablespoon coconut oil and pour in batter, cooking in batches until all batter is used.
- Add final 1/2 tablespoon of oil as needed throughout the cooking process.
- Stack alternate flavoured pancakes, and top with mousse, bee pollen, honey, cacao nibs and fresh strawberries as desired. Grab a knife and fork, and share with a loved one!
