Strawberry and Chocolate Pancake Stack

Now I wouldn’t suggest you eat this every day. It’s more of a Sunday brunch kind of deal. But in true Fit Foodie style, this has nothing but natural healthy ingredients that will nourish your body – not to mention put a smile on your face.

SERVES: 2

INGREDIENTS:

STRAWBERRY PANCAKE BATTER

  • 1 large egg
  • ½ cup rolled oats
  • 170g pot of plain Greek yoghurt
  • 8 strawberries, hulled
  • ½ teaspoon natural vanilla extract
  • 1 teaspoon cinnamon
  • 1 packet of stevia

 

 

CHOCOLATE PANCAKE BATTER

  • 1 large egg
  • ½ cup rolled oats
  • 170g pot of plain Greek yoghurt
  • 2 tablespoons raw cacao
  • ½ teaspoon natural vanilla extract
  • 1 teaspoon cinnamon
  • 1 packet of stevia

 

1 tablespoon organic coconut oil
 
GARNISH
  • 1 heaped tablespoon healthy chocolate mousse
  • 1 teaspoon bee pollen
  • 1 teaspoon cacao nibs
  • 6 strawberry halves
  • drizzle raw honey

METHOD:

  1. In a blender, process all strawberry batter ingredients until smooth and set aside.
  2. Repeat for chocolate batter.
  3. In a large frying pan, add 1/2 tablespoon coconut oil and pour in batter, cooking in batches until all batter is used.
  4. Add final 1/2 tablespoon of oil as needed throughout the cooking process.
  5. Stack alternate flavoured pancakes, and top with mousse, bee pollen, honey, cacao nibs and fresh strawberries as desired. Grab a knife and fork, and share with a loved one!
