Sticky and sweet, these heavenly peaches are balanced with creamy plain yogurt and a sprinkling of heart-healthy nuts. While low-fat, fruit does contain plenty of natural sugar so be sure to watch your intake for the remainder of the day.
Recipe
SERVES: 2
INGREDIENTS:
- 2 ripe peaches
- zest and juice from ½ large orange
- ½ tablespoon honey or rice malt syrup
- 2 tablespoons flaked almonds
- 2 tablespoons pistachios, chopped
- ½ cup plain Greek yoghurt (optional)
METHOD:
- Preheat the oven to 180º. Halve and stone the peaches.
- In a roasting dish, lay in peaches (skin side down) and cover with orange juice.
- Top peaches with honey or rice malt syrup and bake for 20 minutes.
- Serve warm with dollop of yogurt (if using), sprinkle over pistachios, almonds and zest, then finish with a drizzle of the remaining orange juice.
Tips:
Avoid using flavoured yoghurt with this dish – they will overpower the delicate peaches and are likely to be full of extra sugar.
