Sticky Grilled Peaches

Sticky and sweet, these heavenly peaches are balanced with creamy plain yogurt and a sprinkling of heart-healthy nuts. While low-fat, fruit does contain plenty of natural sugar so be sure to watch your intake for the remainder of the day.

SERVES: 2

INGREDIENTS:

  • 2 ripe peaches
  • zest and juice from ½ large orange
  • ½ tablespoon honey or rice malt syrup
  • 2 tablespoons flaked almonds
  • 2 tablespoons pistachios, chopped
  • ½ cup plain Greek yoghurt (optional)

METHOD:

  1. Preheat the oven to 180º. Halve and stone the peaches.
  2. In a roasting dish, lay in peaches (skin side down) and cover with orange juice.
  3. Top peaches with honey or rice malt syrup and bake for 20 minutes.
  4. Serve warm with dollop of yogurt (if using), sprinkle over pistachios, almonds and zest, then finish with a drizzle of the remaining orange juice.

Tips:
Avoid using flavoured yoghurt with this dish – they will overpower the delicate peaches and are likely to be full of extra sugar.
