{VEGAN} Sweet + Salty Chocolate Sundae

Admittedly this recipe takes a bit longer than my usual (unless you’re friends with Heston Blumenthal – in which case you can borrow some nitrogen to freeze the ice-cream). You have to believe me though, it’s totally worth the wait. Of course, you could cheat and buy some Chocolate Coyo ice-cream from the health food store, but where’s the fun in that?

This is salty, chewy, crunchy, sweet and chocolatey….all of which you need in your life. In one GIANT bowl.

Spiced Cauliflower Soup

You’re probably thinking ‘soup never fills me up’ – and I totally get it. Does anyone just have a soup for lunch and feel satisfied? Unless mine’s filled with noodles and shredded chicken, it rarely seems to cut it. Anyway, I pack mine with protein (from the yogurt) or you can add a scoop of plain protein powder if you’re vegan/dairy intolerant. This is a super-soothing, nourishing recipe with lots of healing spices. Turmeric acts as a natural anti-inflammatory – so it’s great for those who work out a lot and put stress on their muscles. It has been found to be so potent that it matches the effectiveness of some anti-inflammatory drugs. Bloody awesome.

Sometimes I don’t feel like having an omelette after a workout. It’s not always easy *or palatable* to get your protein needs. After much testing *poor me* this muffin recipe gets the Fit Foodie tick of approval and is a great post-workout snack. Not dissimilar in taste to your typical cafe muffin, but this one is loaded with muscle-loving amino acids that help build and repair. Also known as super muffins. That’s right.

Want a nourishing breakfast in under 5 minutes? This one takes the same time as pouring milk on top of your coco pops, and is around 1 million times better for you*. Add to a blender, and turn ‘ON’…you can do that right?! Have this when you’re feeling under the weather to replenish vitamins and minerals, or just gobble because it will make you feel awesome, and tastes kinda like banana milkshake.

Okay, so this is a cheats version of a much longer recipe that I love, when I have the time for it (which is never). Who who really has time for anything these days?! If I can make is quicker, simpler and just as nourishing, then it’s going to be hitting my lunch bowl a few times a week. This one has steamed spinach (for iron), brown rice (to keep you fuller for longer), broccoli (for vitamins), mushrooms (for minerals) and an optional egg for protein. You can go all-out and top with some cubed avocado for those good fats, or just drizzle in a little olive oil. Regardless of all that healthy balanced stuff, it just tastes sooo damned good. Oh, and it’s on the table in under 10 mins. Forks at the ready.

Salt + caramel. Is there anything better? Actually, yes. A healthy version. This is one of my go-to breakfasts after an intense morning workout. It helps to replenish protein and glycogen stores and build lean muscle (which in turn burns calories – yay!). The Maca is gives the dish a toffee flavour, and works to alleviate anxiety and stress in the body. It’s also high in iron and is great for boosting energy – much needed on a Monday morning. Whip it up in under 2 minutes for a delicious dessert too.
