Good Eats: Spring Mangoes Two Ways

Spring is here and that means one thing...juicy Aussie mangoes are now officially IN SEASON. YAHOO!!!

Cue me making a complete mess of trying to cut them properly (yes, I know the scoring method...but still).

Joyfully, they're at their best in Aus from Sept-March. 100% Australian mangoes are in abundance and ripe for the picking right now!

Not only are they mouth-wateringly sweet and juicy, but they're super versatile and nourishing too.

 

One serve of these golden babies (that's  150 grams, guys, not the entire fruit bowl *sigh*) has over 95% of your daily Vitamin C requirements and over 70% of your Vitamin A which promotes good eyesight. All the better to pick good mangoes with. They're also great on fibre for healthy digestion, and have a relatively low glycemic index (41-60), so they won't spike your blood sugar levels.

How to pick:

Colour isn’t the best indicator of ripeness. To know if a mango is ripe you need to squeeze it gently - a ripe mango will give slightly.

Woolworths supermarket has them in abundance right now, and they're great quality fruits. So much so, that I've been playing around in the kitchen with heaps of them, and saved my fave two recipes for you guys:

Tofu, Mango + Seedy Salad

Serves 1

In the bottom of your favourite salad bowl, add a huge handful of cos leaves (or any others you have lying around), top with 1/2 avocado (cubed), 1/2 mango (cubed), 100g smoked organic tofu,2 tbsp toasted coconut, 1 tsp chia seeds, 1 tsp pumpkin seeds, lemon juice and sea salt. I added the a fennel flower head too - for a sweet aniseed taste, and a few leaves of oregano. Add any herbs you have in the fridge or better yet, from your garden.

Mango Banana Smoothie Bowl

Serves 1

Blend 1 1/2 frozen bananas with 1/2 mango, pinch Himalayan sea salt, 20g vanilla protein powder (I love pea protein), 1 tbsp shredded coconut and 1/2 cup coconut milk. Decant into a bowl and top with additional mango and coconut. I sprinkled on some optional vanilla bean powder and dried flowers too!
