Beat the Festive Bulge: My Go-To Healthy Christmas Lunch

Doesn’t this look like the perfect Christmas Platter?! Well, if you live in Australia, that is (sorry cold-weather friends!). That avo + feta + mango combo is so good (fat, salt, and sweet) - then prawns for that umami. HELLS YES. To make it more filling, I’ve added Macro Bulgur Wheat. No faffing about with cooking this grain - it’s just a soaking-in-water situation. I mix it with smoked paprika once soaked for extra flavour.

DID YOU KNOW? Bulgur Wheat is high in minerals like iron and magnesium, plus is a good way to amp-up your plant-based protein intake.

I once tried to do a roast turkey because my English heritage and tradition wanted it. The 35-degree heat did NOT agree. I legit cooked it and let it go cold for lunch the next day. SOOO here’s an awesome, simple, throw-together lunch that will impress your fam and friends, even if you can’t cook. Just tell them it's too hot for turkey or ham.

Serves 2 as a Main

1 cup Macro Bulgur Wheat, soaked
1 tsp smoked paprika
1/2 cup crumbled feta
1/2 cup Macro Organic Walnuts
1 avocado, sliced
2 handfuls of baby spinach
1 mango, sliced
3 small radish, thinly sliced
8 - 10 cooked prawns (or really, as many as you like to eat!).

Method: Mix Macro Bulgur Wheat with paprika and season to taste.
Add spinach, Macro Bulgur Wheat, avo, mango, feta, walnuts and prawns to the plate. Pile them high.
Andddddddd….DONE!
No heat required. Serve to smiling, hungry mouths immediately. You’re welcome, Chef.
