Christmas Dandy Latte

Dandelion (or just Dandy, if you’re hipster), makes an awesome coffee substitute. It’s roasted so you get that earthy, rich aroma that you get from your usual morning brew, but with the benefit of zero caffeine. I’m quite sure around xmas time I get enough caffeine through chocolate. It’s also a bit hard-hitting on your adrenals, so I like to moderate my intake at times of higher stress. Dandy is the perfect option. It’s great for detoxification of your liver – which is also helpful at Christmas if you’re prone to a drink or six – and also helps promote healthy digestion.

Light the fire and cuddle up with a cup of this and a daggy film. Santa will soon be here!

Banana + Coconut Teff Muffins

Wholegrain Teff is extremely nutritious. It boasts a wealth of vitamins and minerals including magnesium, potassium, zinc, copper, manganese, choline, Vitamin B3 (niacin), Vitamin B6, Thiamin, Pantothenic Acid, Riboflavin and Vitamin C, which is rarely found in grains. Teff can be purchased as a wholegrain or flour, which is used most commonly in Ethiopia to make a traditional sourdough flatbread called injera. It makes for a highly nutritious substitute to traditional gluten-containing flours. Try it in these amazing muffins for a nutritious way to start the day!

Admittedly this recipe takes a bit longer than my usual (unless you’re friends with Heston Blumenthal – in which case you can borrow some nitrogen to freeze the ice-cream). The Maca is gives the dish a toffee flavour, and works to alleviate anxiety and stress in the body. It’s also high in iron and is great for boosting energy – much needed on a Monday morning. My mum used to make the best lemon tarts. Buttery, crumbly pastry cases filled with sharp zingy lemon curd. When I asked for her recipe, I learnt she actually makes it in the microwave. Not my favourite cooking technique, nor was I a fan of the butter and sugar content. So here’s my healthy version, for all you curd lovers out there. Spread on wholemeal toast, dollop on your morning oats, ripple through Greek yoghurt or enjoy straight from the jar with a spoon. Also amazing with a goats cheese salad…just trust me on that one!

These tasty caramels come totally guilt-free. Tahini is simply ground sesame seeds – full of healthy fats and nutrients to nourish your body. Throw in some metabolism-boosting coconut oil, low GI Sweetner, high antioxidant cacao powder and an awesome superfood powder, and really this could be medicine. Right? Baobab powder has a delicious caramelised pear flavour. It’s high in fibre, vitamin C, potassium (great for workout recovery), and acts as a natural prebiotic. My smoked fish addiction is pretty out of hand. In fact, smoked anything really tickles my fancy…but I am wary of the sodium content.
