Healthy Instant Noodles

When you really don’t have time to prepare your lunch, just grab the ingredients below and throw this together quickly at the office. It makes for a healthy, tasty lunch in the time it takes the kettle to boil.

SERVES: 1

INGREDIENTS:

  • 1 packet of ready-to-eat organic soba noodles
  • 1 sachet of miso soup paste
  • 60g poached salmon or chicken
  • 1 teaspoon tamari sauce (optional)
  • sesame seeds (optional)

METHOD:

  1. In a bowl add miso paste and noodles.
  2. Top with boiling water and stir well.
  3. Flake over poached salmon (or chicken) , stir through tamari sauce and sprinkle over a few sesame seeds.

 

Tips:
Soba is the japanese word for buckwheat. Buckwheat is a low-gi complex carb that will not spike your insulin. The higher the buckwheat content of your noodles, the better – so make sure you read the ingredients.
Check the sodium content of your miso paste so you can be sure to select the one with the least amount of salt.
Pack in some extra veg by adding some sliced spring onion and edamame beans
