When you really don’t have time to prepare your lunch, just grab the ingredients below and throw this together quickly at the office. It makes for a healthy, tasty lunch in the time it takes the kettle to boil.

SERVES: 1
INGREDIENTS:
- 1 packet of ready-to-eat organic soba noodles
- 1 sachet of miso soup paste
- 60g poached salmon or chicken
- 1 teaspoon tamari sauce (optional)
- sesame seeds (optional)
METHOD:
- In a bowl add miso paste and noodles.
- Top with boiling water and stir well.
- Flake over poached salmon (or chicken) , stir through tamari sauce and sprinkle over a few sesame seeds.
Tips:
Soba is the japanese word for buckwheat. Buckwheat is a low-gi complex carb that will not spike your insulin. The higher the buckwheat content of your noodles, the better – so make sure you read the ingredients.
Check the sodium content of your miso paste so you can be sure to select the one with the least amount of salt.
