Broccoli and Cheese ‘Meatballs’

These faux meatballs are a vegetarians delight. Serve with a little vegetarian gravy and some wholemeal spaghetti, or store in the fridge for a savoury snack.

SERVES: 4

INGREDIENTS:

  • ¾ cup raw almonds
  • ½ large head broccoli, cut into florets and steamed
  • ½ cup grated low-fat cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 organic egg
  • olive/coconut oil spray

METHOD:

  1. Preheat oven to 180º.
  2. Pulse almonds in a food processor until they’re ground but small chunks still remain. Tip into a bowl, then add broccoli to food processor and blend until finely chopped.
  3. Tip into bowl with almond, add egg, garlic and seasoning and mix well with a fork.
  4. Spray a cupcake tin lightly with oil, and mould into 12 balls. If the mixture is too wet, add a little almond meal or coconut flour. if it is too dry, add a little water.
  5. Bake for 20 minutes until golden.

Tips:
Serve cold as a delightful appetiser.
Almonds can be substituted for any of your favourite nuts. Walnuts are delicious!
