These faux meatballs are a vegetarians delight. Serve with a little vegetarian gravy and some wholemeal spaghetti, or store in the fridge for a savoury snack.

SERVES: 4
INGREDIENTS:
- ¾ cup raw almonds
- ½ large head broccoli, cut into florets and steamed
- ½ cup grated low-fat cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 organic egg
- olive/coconut oil spray
METHOD:
- Preheat oven to 180º.
- Pulse almonds in a food processor until they’re ground but small chunks still remain. Tip into a bowl, then add broccoli to food processor and blend until finely chopped.
- Tip into bowl with almond, add egg, garlic and seasoning and mix well with a fork.
- Spray a cupcake tin lightly with oil, and mould into 12 balls. If the mixture is too wet, add a little almond meal or coconut flour. if it is too dry, add a little water.
- Bake for 20 minutes until golden.
Tips:
Serve cold as a delightful appetiser.
Almonds can be substituted for any of your favourite nuts. Walnuts are delicious!
