Full disclosure: I am extremely partial to the humble cookie. To me, there is nothing better than one fresh out of the oven with the chocolate all melted - and nothing worse than being tricked into thinking that a cookie has choc chips but actually has dried fruit. It's only natural then, that National Cookie Day is one of my favourite days of the year.
So with that being said, I personally need no excuse to eat cookies all day every day, especially once you know how to change it up with ingredients that won't make you bounce off the walls like a hyperactive 2-year-old.
