How to take your almond milk to the next level

Since swapping to almond milk, my tummy has been a fair bit happier (#personalwin) so either I'll make some at home or head to the shops in search of one without carrageenan and vegetable oil. Yes - they are added by some brands, and no - tummy does not like. Major supermarkets have seen a 40% increase in sales of the stuff in the last year - probably because we're all taking note of how our stomach react to lactose.

Most tetra-pack varieties contain between 2-10 per cent almonds and many are pasteurised for a longer shelf life, so it does make sense to whip up your own.

Heres a super-simple recipe to make your own nut milk:

  • 1 cup raw almonds
  • 2 cups filtered water
  • pinch of sea salt

1. Pre-soak the almonds in water overnight with a pinch of sea salt, then rinse.

2. Blend the almonds with 2 cups of water into a food processor or blender for 3-5 minutes.

3. Strain the milk to remove any remaining almond bits (pulp) using a nut milk bag, cheesecloth or fine sieve.

4. Store fresh almond milk in the fridge for up to three days. You can also freeze it to save you messing up the blender every 3 damn days.

Why flavoured milks are yuk.

Some flavoured milks aimed at kids have over 10 teaspoons of sugar added, which is a bit of a worry when they're already so full of energy. You also know I'm a bit of a low-sugar warrior, so I'm pretty happy to see a genuine alternative for kids that isn't going to cause problems with their mood, every levels and cravings later down the track.

In the past I've been a sucker for chocolate milk and sweetened protein milk shakes, but they're loaded with sugar too. If you're a lover of those shakes, syrups, ice-cream or added sugar in your coffee, these are definitely worth a try to cut down on some of the white stuff. It's guaranteed your kids will love them too. Double win!
