Watermelon Pizza

We can all agree that it would be *awesome* if there was a healthy version of pizza out there. There’s just something about picking a multitude of toppings that gets me over-excited. While this one isn’t filled with melted cheese, it’s just as delicious (promise). It’s practically a fruit salad, which means you can have 4 slices of pizza and not feel ill. You will need a watermelon any then anything else lying in your fruit bowl or pantry – scarcely a recipe, but share-worthy all the same!

SERVES: 2-4

INGREDIENTS:

  • One round slice of watermelon
  • 1/4 cup cubed mango
  • 1/4 cup blueberries
  • 2 tbsp dried mulberries
  • 2 tbsp flaked almonds
  • bee pollen (optional)
  • Mint leaves
  • Lemon wedge

METHOD:

  1. Slice the watermelon into wedges and place on a pizza plate.
  2. Scatter with mango and the remaining toppings
  3. Top with fresh mint
  4. Squeeze over lemon + enjoy immediately

Tip: For a delicious summer twist, grill the watermelon slice on the BBQ for a few minutes in each side before topping to impart a smoky flavour.
