Chai Spiced Banana Bread

Looking for a healthy take on your favourite morning treat? This is it. Traditional sugar is replaced with stevia, meaning fewer calories and plenty of natural sweetness. The addition of cinnamon helps to stabilise blood sugar levels, meaning you won’t suffer cravings later on in the day. Warming spices never looked so inviting! Toast a slice for breakfast, and top with a little ricotta and honey…your Sunday morning, sorted.

SERVES: 10

INGREDIENTS:

  • 3 bananas, mashed
  • 1 cup almond meal
  • 1/2 cup coconut flour
  • 1/4 cup melted coconut oil
  • 3 free range eggs
  • 1/2 cup Natvia (stevia) or granulated sweetener of choice
  • 1 tsp vanilla bean paste or 2 tsp natural vanilla extract
  • 1 tbsp ground cinnamon
  • 2 tsp each of allspice, ground ginger & baking powder
  • 1 additional banana, sliced lengthways, to garnish

 

METHOD:

  1. Preheat oven to 180.
  2. In a medium bowl, combine wet ingredients.
  3. In a large bowl, combine dry ingredients.
  4. Make a well in the centre of the dry ingredients and pour wet into the centre, while mixing until well combined.
  5. Pour into loaf tin, and lay over the two banana halves, pressing down until they sit into the batter.
  6. Bake for approximately 50-55 minutes, until an inserted toothpick removes cleanly.

Tips:
Freeze pre-cut slices in cling film for up to a month.
Top with a sprinkling of oats, coconut flakes and quinoa for an extra crunchy topping.

  1. I made this Banana Bread for a morning tea with my girlfriends last weekend. I have made countless (healthy-versions) of Banana Bread over the years and I have to say this recipe has gone to first place! Amazing! And so moist! It was an absolute hit and will definitely be made again 🙂

    1. Hey Lennae! Buckwheat would make for a denser loaf, so add a little extra baking powder and it should taste great x
